Uttappa Ingredients:
Besan 2 cups
Rice flour 1 cup
Onion 2-3
Tomato 1
Ginger garlic paste 1 tbsp
Red chilly powder 1 tsp
Turmeric powder 1/2 tsp
Coriander leaves 1/2 cup
Salt.
Uttappa Method:
First cut onions and tomato into small pieces.
Make batter of besan and rice flour.
Add onions and tomato pieces in above mixture.
Mix all the remaining ingredients in above batter.
Now make onion tomato uttappa (about 1 hand in diameter pancake) on tawa (or heated frying pan) with a little olive oil. Flip. Clean the pan between each uttappa by taking half a small onion dipped in olive oil and rubbing it over the pan.
Chutney Ingredients
250g/9oz fresh grated coconut or frozen coconut, thawed
or 150g/5oz desiccated coconut
1 large bunch of fresh coriander
1 large bunch of fresh mint
4-5 green chillies
6-8 garlic cloves
1 tsp (heaped) cumin seeds
1 tbsp sugar
1 large lime, juiced (or to taste)
salt
Chutney Method
1. Put all the ingredients into a blender until you have a thick paste, adding a little water if necessary.
2. Taste and adjust the seasoning, adding more lime juice
